Fiona Apple and Johnny Cash did a couple of songs produced by Rick Rubin that were terrific; they did a version of Simon & Garfunkel's 'Bridge Over Troubled Water' that is just perfect.

 
"Perhaps Love" by John Denver & Placido Domingo. This song will met a woman's heart. The words "If I should live forever, and all my dreams come true, my memories of love will be of you" is one of the best love lines ever written in popular music.
 
yeah, the Traveling Wilbury's get my vote.

One great collaboration I saw was Sting, Garcia, Glen Frey, and Bruce Hornsby on stage together.

The Sting / Paul Simon tour had great moments as did the Paul Simon / Bob Dylan tour as did the Dylan and the Dead tour.......hmmmmmm

many Jazz concert tours are really collaborations with changing personnel
 
How about U2, Mick, and Fergie with a little 'Gimmie Shelter' I think Mick had some urges a 75 yr old may not have had in a while on this one!!
