Ot up at 4 am putting on a couple of briskets

I was up at 5 cleaning my restaurant from some construction we had last night. Sounds like you had more fun. Plus you were able to go back to bed. Now it's Time to make the donuts!
 
Shades of irondoc. Any seasoning on the briskets or did you go straight panda?


Unlike irondork, he didn't tell us how foul his wife is, how he and his son are going to beat posters up, what he had or is going to have to drink, how big a shit he took and what the color and texture was.
 
You don't use any salt?
No. The first long slow cook I did I used salt (ribs). They tasted like ham. So I stop putting salt in my rubs. Some of the boys at the BBQ board didn't put salt in theirs either. Some do. So I basically use pepper, paprika, brown sugar, red pepper and whatever pops in my head. I know Aaron Franklin rub is just salt and pepper, but really what does he know!!!l lol!!
