Penn State bars in the Hamptons? *

Only one that I know of in the Hamptons. Sports bars are far and few between on the south shore but one that holds itself out to be a sports bar in Southampton is Fellinghams. But if you just want some good places to dine, that I can give ya.
The Long Island chapter of the PSAA holds TV viewing parties for PSU games at:

They have to reserve tables for evening games, and request that you contact Peter Fushan, at:

to reserve a table, and tell him how many will be in your party for the TV viewing party.
That's a bit of a distance from the Hamptons, but if you join their TV viewing party, I hope you have a great time.
