With summer upon us, we're all going to want to be outside grilling/smoking our favorite meat and enjoying our favorite beverage. I was thinking of smoking some ribs this weekend, but I don't think the weather will cooperate. Maybe next week.
Regardless, what's your favorite thing to grill/smoke? Any unique ideas or interesting things you've done that turned out way better than expected? Any secret tips, at least the secret tips you're willing to share? What's your routine for your favorite grill item?
As for unique or uncommon grill items, I would recommend grilling a pizza if you've never done it. It's much better than you might expect and not nearly as difficult as it seems. I also read this week about smoking a whole pineapple. It's supposed to be excellent and that'll be the next weird thing I try. Last weekend I smoked pork loin rubbed with Italian seasonings. Turned out excellent and used it in Cuban sandwiches and pasta with pesto during the week.
Personally, I love smoking ribs. Keep the smoker between 225-250 for about 4-6 hours, adding wood chips every hour and spraying the ribs with vinegar half an hour after I add the chips. I keep a tin of water in the smoking chamber for added moisture and use a dry rub and don't sauce the ribs at all. There's sauce available afterwards of course for whoever wants it, but I think it's better to leave that up to each person.
I'll alternate grill masters dry rubs, but I want to look into making my own. Anyone have a really good recipe for that?
