OT - Favorite Salt Water Fish

Fish caught and frozen on the boat is generally fresher than fresh fish which has to be shipped unfrozen. Just make sure you don’t let it thaw before preparing it.
Pro tip from a charter captain for those who are lucky enough to catch or be gifted more fish than you can eat in a day or two....
Put a cookie sheet covered in foil in the deep freezer for an hour.
Lay fillets one deep on the cookie sheet.
Mist fillets with water
Put in freezer for 20 minutes.
Repeat 3 more times until fillets are coated with ice.
Bag in ziploc bags.
Fillets are easily separated when you want to use them and the ice coating prevents freezer burn.

Hogfish Bar, Stock Island. You and bru know it? Rarely off the menu there. My favorite chilling spot after a day under the golden hammer on the bow of a flats skiff. As non-Montana as it gets.
Sounds great never Been there .Never been to key west only as far as marathon.
 
For me it’s a tie, bonefish and redfish...on a fly of course. Bonefish are more challenging to make the cast because of the wind but I have had a blast catching both. I day dream about fishing for both.

I’ve had some incredible fun catching “reds” on topwater poppers & gurgler flys. You will laugh ur ass off with joy.

no question- never eat fresh fish if you aren't on the coast- because it ain't fresh
 
Saltwater fly is such a kick in the pants. I remember when I hooked up with my first bone. My boat partner asked if I had ever had a trout take me into my backing. That bonefish had me into my backing twice befor I landed it.
I get to do so little these days. I got spoiled when my grandparents would host me in St Pete. No bones around, but so many species were possible to hook that the uncertainty of what any day could be kept me hooked.
 
Thanks for all the suggestions. So tonight I put my Lyle Lovett playlist on and navigated the E class over to Princeton (not another Princeton thread I promise) to the Blue Point Grill, one of my favorite seafood haunts. After splitting a dozen raw oysters with my better half, 6 Wellfleets, and 6 Eastpoints, I had the mixed grill of wild Canadian Steelhead salmon and Sturgeon with some garlic mashed potatoes. BYOB, so took a nice Sauvignon Blanc. Dessert was a decaf espresso, and split a brownie sundae. Managed to get home without hitting any deer, and just tuned into True Detective. A good evening!

And btw, I couldn’t find food like this in State College.

Steelhead to backing on a few occasions. I so need to try saltwater fly. In my younger years, always enjoyed Flip Pallet go hunting for tarpon on a fly rig.
 
I’m going to one of my favorite seafood restaurants tomorrow. For me it’s Halibut filet or whole Bronzino. What say you?


Not very knowledgeable here, but of what I have tried, Halibut! Love it but it is expensive in "fly over" country.
