Pro tip from a charter captain for those who are lucky enough to catch or be gifted more fish than you can eat in a day or two....Fish caught and frozen on the boat is generally fresher than fresh fish which has to be shipped unfrozen. Just make sure you don’t let it thaw before preparing it.
Put a cookie sheet covered in foil in the deep freezer for an hour.
Lay fillets one deep on the cookie sheet.
Mist fillets with water
Put in freezer for 20 minutes.
Repeat 3 more times until fillets are coated with ice.
Bag in ziploc bags.
Fillets are easily separated when you want to use them and the ice coating prevents freezer burn.
