Used to visit Dietrich's at the Kutztown Farmers Market every Saturday for many years when I lived in PA.My son went to South Korea and had makchang, which is a dish made with abomasum (cow's stomach). He wants to try making it himself. Good luck finding that in a supermarket! We were able to get it at Dietrich's Meats in Krumsville, PA. He's going to cook it for us over Labor Day weekend. Exotica!

As important to food as hops is to beer. Much more important than wifes sister, especially if wife is not the "understanding" type. Dry aged steaks have to be treated very carefully, or they will be dry. And steaks shouldn't be cooked in a pan, unless you are making chicken fried steak-always use wood and a grill!

Come on. He's a British restaurant chef who is interested in speed. BBQ is all about the experience. Hardwood flavor cannot be beat. I cook on a Green Egg at 700 degrees then finish on low side at 300 degrees.
