To your points, an eye poke, or other incidents where the ref stopped things just to check on the wrestler would not result in the other wrestler having choice. It's only in situations where they can't shake it off, or need to be attended to by a trainer, and thus the injury clock is started, where the other wrestler gets choice.
In most matches, even if choice was granted, it wouldn't make much of a difference. In this match, where they were in SV-1, and neither guy had shown a lot of offense and the only TD scored was in the 1st period, and neither guy had shown the ability to ride the other guy for very wrong, having choice was an advantage for Nick. Whether he had lost an advantage to counter and get a TD when Kasper got injured, we'll never know.
